This spirit is the apple of our eye… Avallen is a fresh, floral and fruity style of Calvados for a new generation of drinkers who place the well-being of the planet firmly in their core values, if you'll excuse the pun. Crafted at Distillerie Coquerel in Normandy using nothing but 40 different apple varieties from 300 orchards in the pesticide-free region of La Manche, Avallen is aged in French oak for two years and bottled without the addition of sugar, caramel or boisé (a syrup made from boiled wood often used to imitate maturity in Calvados and Cognac). These apples really didn't fall far from the tree, and their minimal processing creates a natural spirit that buzzes with energy and life like the orchards it hails from. Aromas of fresh apple, cider and honeysuckle give way to toffee apple flavours, tannins and spices from the oak, and a finish reminiscent of apple pie and custard. Avallen is an old Cornish term for'apple tree', and we love it topped with tonic water or mixed into summery cocktails.
