Les Côtes is a wonderfully fresh style of Saint-Joseph. It comes from four hillside vineyards scattered around the village of Ardoix. The combined size of these plots is only one and half hectares, so volumes are pretty small, making this a rare find. Half is vinified in stainless steel and the other half in old oak barrels, resulting in refreshing, fruity and approachable red. What makes it such a favourite with us is the food-friendly acidity, which makes it a fine choice with heavy meals like a Sunday Roast and hearty stews. Vincent Paris has been making Rhône wines for a couple of decades, but that still makes him one of the newbies. He started with just one hectare and has been quietly building. As quite a shy character, he lets the wine do the talking and his wines shout.
