It opens up into a broad midpalate, maintaining that focus through a lingering finish with a delicious butter-cookie flavour."- Wine Enthusiast The biodynamic Evening Land Vineyards, based in the USA's Willamette Valley, is another excellent collaboration between one of the world's most celebrated sommeliers, Rajat Parr, and the Piedrasassi winemaker, Sashi Moorman. The two bonded over a shared love of elegant European style wines and went on to create Sandhi and Domaine de la Côte in California. Now they've branched out into the beautiful rolling countryside of Oregon. The Seven Springs Vineyard in Eola-Amity Hills was planted in 1984 with a little help from the legendary Dominique Lafon. Protected by a forest of Douglas fir trees and cooled by Pacific air blowing up the Van Duzer corridor, it's widely regarded as being one of the finest spots in the entire region. This estate Chardonnay comes from a block of Burgundian clones that face northwest on the edge of the vineyard. The grapes are picked by hand and gently pressed on a Champagne press cycle. The must is fermented in French barriques and 500-litre Stockinger puncheons using natural yeast. It remains in barrels for 12 months before being bottled. What emerges is a Chardonnay with striking aromatics; think lemon curd, grapefruit, tangerine and beach pebbles. On the palate there's lively acidity (making if very food friendly), vanilla, spring blossom, lemon oil and roasted pineapple.
