It starts off life as a Fino with the protective veil of flor, but then the flor dies away, and the wine continues to age oxidatively like an Oloroso. Apostoles is matured in solera* for three decades, and it also has a little Pedro Ximénez added for richness. Imagine the richness of Oloroso combined with the crispness of Amontillado and a splash of festive flavour. Amber in colour, it presents cherry chocolate liqueurs, fruitcake, caramel, red grape skins, caramel, orange peel, salted almonds, figs, hazelnuts, wood and a gentlewhiff of coffee; this is a gorgeous partner to tapas, Christmas fare, cheese, nutty desserts or just some salted nuts.
