In 1999, after realising the potential for English Sparkling Wine, Ian Kellett bought Hambledon Vineyard and began studying oenology at Plumpton College in Sussex. After few years of research and tests over the best combinations of vine clones and rootstocks, the vineyard was converted into a company in 2010. Nowadays, Hambledon is comprised of more than 200 acres of vineyards planted with Chardonnay, Pinot Noir and Pinot Meunier. In pursuing the vision to produce the best multi-vintage sparkling wine in England, the estate hired Herve Jestin as head winemaker and it built the only gravity-fed winery in the country. The Hambledon Classic Cuvée is the estate's flagship wine and is a classic blend of 60% Chardonnay, 20% Pinot Meunier and 20% Pinot Noir. Lively and fresh aromas of white blossoms and acacia accompany richer notes of baked apples, plums and smoke. In the mouth the wine reveals tremendous vibrancy and tension, with structured yet ripe acidity. This wine will accompany well smoked salmon, fresh seafood or ceviche.£4.4 per 100.00ml
