Savoir faire at its very best!"- Jancis Robinson's Purple Pages This rosé Gran Reserva Cava is pure Pinot Noir from a specific parcel in the Espiells vineyard, which is nicknamed'La Siberia'because of how cold it is. Flanked by a forest and a stream, these chilly vines ripen very slowly, creating a wine of unfathomable complexity and freshness. It's made in minuscule quantities and we were only able to secure four bottles, so we'll be limiting this spectacular wine to one per customer while stocks last. La Siberia Rosé was aged on the lees (the spent yeast that gives quality sparkling wine its nutty, yeasty and bready flavours) for around 80 months, which is a phenomenally long time that puts many of the most famous names in Champagne to shame. Despite all that time in the dark of the cellars in Sant Sadurní d'Anoia, this still crisp and refreshing. But beneath all that summery zing, there are notes of creamy cherry yoghurt, dried apricot, buttery puff pastry, wild strawberry sorbet, toasted sourdough, oily Marcona almonds, pink grapefruit zest, walnut baklava, smoke, marmalade and dried flowers.
