The"Junmai"title means it's a prized premium sake, while"Ginjo"explains that the rice has been highly polished. In this case, the rice has been polished to 60%, meaning that 40% of each grain has been gently milled away. This removes some of the more umami and ricey flavours, creating something more refined and delicate. Expect aromas and flavours of flambéed banana, crisp apples and pears, lemon peel, melon, grapefruit, walnut oil and mushrooms on yeasty sourdough, and consider pairing it with gyoza, teriyaki, unagi, katsu, barbeques, Kobe beef, mature cheese or mushrooms on toast.
