Throughout their history Pio Cesare has made limited quantities of Barolo Chinato and Vermouth to old family recipes handed down by their great grandfather. In the 1950s they stopped briefly as customers seemed to be more interested in liqueurs. But recently tastes have changed, as demonstrated by the meteoric resurgence of the Negroni, and so Pio Cesare has resurrected these historic and monumental recipes. Chinchona is macerated in Pio Cesare's classic Barolo for 21 days, before adding a mixture of aromatic botanicals, such as gentian root, rhubarb, cardamom, orange, cinnamon, cloves, nutmeg, vanilla and a whole raft of secret ingredients. After several weeks, more Barolo is added and the whole thing is aged for four months in oak barrels and a further two in the bottle. It tastes a lot like Christmas, with huge spicy complexity, and should be sipped after dinner, as many locals claim it helps to boost the digestive process. Pio Cesare was established in 1881 and is now run by the fifth generation of the family, Pio Boffa, with help from his daughter Federica.
