Ooh baby, I like it RAW! Sankou RAW is a powerful, dense and umami sake. We recommend this explosive and full-on style for experienced sake drinkers and lovers of natural wine and neat spirits. Open the can to unleash notes of walnuts, cacao nibs, marshmallow, roasted herbs, edamame beans, tropical fruits, tangy citrus, dried apricots and an almost chilli heat from the 20% ABV. We recommend serving it chilled, but you can also freeze it overnight, take it out, shake it, and serve it as a slushy-style beverage. Consider pairing with spiced tuna California rolls, creamy curries, spicy nibbles or deep-fried food. Most sake is pasteurised and diluted during brewing. But Sankou RAW is"nama genshu"sake, an untamed, punchy and rich style that undergoes neither of those processes. As this kind of sake is highly sensitive to sunlight, heat and air, it's usually only available to buy as a special treat at the brewery. But now it's available in this can, which protects it perfectly and can be stored at an ambient temperature. Despite being a tiny operation with just six employees, Sankou Masamune are creators of some of Japan's most exciting sake, shochu and mirin. The founder skedaddled to America during the Meiji era to seek his fortune growing strawberries. After achieving the American dream, he returned to Japan as a rich man and established a brewery in 1918. The company is named after Mount Sanko in the northwest of Okayama prefecture and their logo includes a ripe strawberry in honour of Shigegoro Miyata epic journey.£5.5 per 100.00ml
