A perennial favourite amongst Single Malt enthusiasts, Talisker's full bodied, smoky and complex style is as inimitable as it is alluring. Talisker 25 Year Old is one of the distillery's rarest and most coveted releases, having been rested in cask for over a quarter of a century. The oldest distillery on Skye is known for its powerful fire, spice and maritime character, so there was a chance that ageing Talisker for this long might dumb down what makes it so awesome. But none of that personality has been lost, it has just added more richness and complexity. This is a beautifully balanced expression of Talisker, the nose is savoury and smoky, with aromas of citrus fruit and coastline, plus a whiff of saline minerality. Surprisingly fruity and youthful, this 25 year old displays a big personality and a clear Talisker identity. Sweet and restrained at first - with some acidity and saltiness - the mid-palate and finish becomes dry, stony, dusty and toasty before exploding on a flavoursome and persistent finish. Expect salt, pepper, crispy bacon, cider, heather honey, chipotle, dried fruits, rose jam, nectarine, antique furniture, Manzanilla, grapefruit peel and liquorice, plus and earthy smokiness reminiscent of visiting active volcanoes. Hailing from Carbost on the Isle of Skye, this is a very serious piece of kit, full of depth and quite simply a must-have for weathering the colder months.£64.29 per 100.00ml
