Tatenokawa 33, known in English as"Three Peaks", is one of the brewery's most prestigious sakes. This is because it's made to an impressive rice polishing ratio of 33%, meaning that 67% of each grain is gently milled away. The more you polish, the cleaner, brighter and more delicately aromatic the final sake, so this is right up there with the very best. Crafted using rice grown by their very own rice research institute, it has a gentle yet rich aromas of juicy pear, cantaloupe melon, pineapple, mango, lime, jasmine tea, spice and spring blossom. Silky and deeply complex, it manages to be savoury, sweet, sour and dry all at once, making it a treat for the senses. We recommend saving this for very special occasions. Tatenokawa (meaning"Castle Brook") is a sake producer with a long and illustrious history, going back almost two hundred years. What we love about them is that they don't get bogged down in all that tradition though, leaving them free to innovate and spread the word of sake culture throughout the world.
