The Santenay Premier Cru of Les Gravières pushes up close to Chassagne-Montrachet, so this is exceptional terroir with fine pedigree. It produces both reds and whites, but we've particularly fallen for Vincent Girardin's biodynamic red. Matured in oak for 14 months and bottled without fining or filtration - making it just as nature intended - it has power and perfume. Red fruits, wild strawberry, wildflowers and a light airiness make it a fine match for game, lighter Sunday roasts, tomato-based stews and rich cheese sauces.
