Bottled in the traditional flat-bellied'Bocksbeutel', Hans Wirsching's Iphöfer Kalb Silvaner is brimming with quince, apple, pear, melon, chalk and freshly harvested hay. This half bottle is far simpler to fit into your dinner concept than it is to squeeze into the wine rack. Try alongside asparagus finished with lemon, butter and sea salt; sushi or sashimi; or charred spring onions with romesco sauce. It also makes a fine match to tapas, salmon, salads and picnics. Riesling may be the King of Grapes in Germany. But in the arty region of Franken, they pledge allegiance to another: Silvaner. In the right hands and the right place, this tricksy grape variety is capable of miracles. Luckily, in Franken they have no shortage of experience. Documents have been found showing that Silvaner was grown here as early as 1659, if not long before. The earthy, concentrated wines it produces between Frankfurt and Nuremberg will appeal to adventurous fans of Austrian whites.However, they're exceedingly hard to find, because the local demand is huge, and very little finds its way out of Germany. So, this is a rare treat. Iphöfer Kalb is a steep, south-facing vineyard in Franken, Germany. The dark gypsum in the soil heats up in the sun, warming the grapes and allowing them to ripen and produced rich, fruity flavours and full-bodied wines.
